Chateau Carrot Cake

Chateau Carrot Cake Recipe

 

2 Cups All Purpose Flour

2 tsp Baking Soda

½ Tsp Fine Sea Salt

1 ½ Tsp Ground Cinnamon

1 ¼ Canola or Vegetable Oil

1 Cup Granulated Sugar

1 Lightly Packed Brown Sugar

1 Tsp Vanilla Extract

4 Large Eggs

3 Cups Grated Carrots

1 Cup Coarsely Chopped Pecans

½ Cup Chopped Walnuts

1 Cup Golden Raisins

½ Cup Sour Cream

1 Tsp Almond Extract

Zest From 1 Orange

 

Cream Cheese Frosting Ingredients:

8 Ounces Cream Cheese at Room Temp

1 ¼ Powder Sugar

1/3 Cup Heavy Whipping Cream

½ Cup Chopped Pecans (For On Top)

 

Instructions

Preheat oven to 350 degrees.

 

In a bowl, combine sugar, oil, eggs, vanilla, almond extract, orange zest and sour cream. Stir in carrots. In a another bowl, mix together flour, baking soda, cinnamon, and salt; carefully stir into flour and carrot mixture. Stir in raisins,  walnuts, pecans. Add batter to a greased 9×13 baking pan, or greased muffin pan.

 

For the frosting, in separate bowl, mix together the cream cheese, powdered sugar and whipping cream. Refrigerate.

 

Bake at 350 Degrees for 35-40 Minutes – a knife poked into the cake should come out clean.

 

Let stand on cool for 20 minutes.

 

Top cake with cream cheese frosting.
